Reorder Questions
Then I reorder the questions, I take a question from the second site (nuber 60) on the first site in the plugin, many questions have gotten mixed up.
The second, in the settings (Translations) of HD Quiz I can*t delete the text in the field “Rename “Select all that apply:” text”? Then I delete the text and save, the text “come back”.

If I understand your first question about ordering (and looking at your site and seeing how you’ve named your questions, I’m pretty sure I do), you have something on your site (either another plugin, or a theme setting) that forces query orders to be in alphabetical order.
Unfortunately, there is nothing I can do to help you with this, as I have no control over what another plugin does. All I can do is suggest that you find what is forcing the order and disable it. Look especially for anything that might affect the order of your posts.
For your second question, Select all that apply text, HD Quiz requires some data here for accessibility. This is why if you leave it blank, it will automatically revert to the default value. I strongly recommend leaving this text as it is very useful for your users, but if you need to remove it the following CSS should work.
.hdq_question[data-type="select_all_apply_text"] .hdq_answers p {display: none}
