Does HD Quiz track quiz takers and questions? For example, if a user takes 5 quizzes, can I see how well they did overall? And if have 100 questions, does it show how frequently each is answered correctly vs incorrectly?

HD Quiz does not track users or store results. For that, you will need the Save Results addon. There is a free version and a paid pro version available. I recommend taking a look at the addon page found under HD Quiz to get a better idea of how the addons work so you can choose the best one for you.
